CRISPY SARDINE CHINESE KALE

INGREDIENTS

  • ½ can of sustainably caught whole sardines with bones (85g can) 

  • 1 Tbsp refined organic coconut oil

  • 450g Chinese gai lan, organic preferred 

  • 2 cloves garlic, minced

  • 1-2 bird’s eye chilies, minced 

  • dash, Himalayan pink salt

  • ¼ lemon, juiced

DIRECTIONS

  1. Rinse, drain and cut gai lan on the bias. Set aside.

  2. Heat up a large pan or wok on medium heat, add coconut oil and garlic, saute until fragrant. Then add sardines and gently mash with spatula, watch out for splatters. Saute until it begins to crisp up, about a minute. 

  3. Add chilies, saute. 

  4. Add cut gai lan, a dash of salt and stir fry, picking up the sardines, garlic and chilies and folding them into gai lan, until cooked through but the stalks still hold texture. 

  5. Plate and squeeze lemon juice to serve. 

  6. Enjoy!
