Quick & healthy peanut chili noodles

QUICK & HEALTHY PEANUT CHILI NOODLES

INGREDIENTS

  • 1 bunch, organic whole wheat udon noodles, cooked 

  • 1 cup organic dark leafy greens, rinsed and spun very dry  

  • 1 egg or Family friendly ramen egg 

  • ¼ cup sauerkraut 

  • 1 pc spring onions, finely chopped 

  • dash, black pepper

Peanut Chili sauce

  • 1 Tbsp organic peanut butter

  • ½ Tbsp toasted sesame oil 

  • ½ Tbsp tamari, organic soy sauce 

  • ½ Tbsp balsamic/Chinese black vinegar 

  • 1 tsp maple syrup 

  • 1 clove garlic, grated

  • ½ Tbsp filtered water

  • 1 fresh bird’s eye chili/chili powder, to taste 

  • Szechuan chili oil (optional)

DIRECTIONS

  1. Boil water in a small pot, add udon noodles to cook according to packet. Drain when ready, rinse with cold filtered water, set aside.

  2. If not using Family friendly ramen egg, then bring another pot of water to boil, soft boil a room temperature egg for 6 minutes. 

  3. Make peanut chili sauce, combine all ingredients and whisk well. Set aside.

  4. Combine noodles with peanut chili sauce, mix well. 

  5. In a bowl, first add salad greens, then layer noodles in. Top with sauerkraut, egg, and then garnish with spring onions and black pepper. 

  6. Enjoy!
