TURMERIC BRAISED GOLDEN POMFRET

Ingredient / Recipe notes:
- Fish retains better quality (moist, texture, flavour) when it stays whole after processing.
- Blooming spices in oil on low-heat activates flavour. Adding black pepper to turmeric can help to increase turmeric absorption.
- Fish source is Hong Kong local government’s FMO program, where local fish farms are tested to ensure water quality, strict guidelines on low levels of heavy metals, and prohibition of drug use. Though feed is not specified to be sustainable.
INGREDIENTS
1pc whole golden pomfret (~300g)
1/4 knob ginger, scrubbed and sliced
1 Tbsp avocado oil
1/4 tsp ground turmeric
1/4 tsp ground dried orange peel (陳皮)
Himalayan pink salt, to taste
ground white pepper, to taste
3 Tbsp filtered water
DIRECTIONS
Clean and dry golden pomfret very well. Set aside until it reaches room temperature.
Heat up a pan on medium heat with avocado or other organic neutral oil, add ginger, it should have a sizzle. Let sauté until fragrant.
Turn heat down to medium-low, add salt, turmeric and ground orange peel, ground white pepper and bloom in the oil for about 30 seconds to a minute, or until fragrant. There should be minor sizzles but make sure the heat is not too high and avoid burning spices.
Turn up the heat a little and add pomfret, making sure the pan is hot enough to have a sizzle. Leave to cook for 3-4 minutes.
Once the bottom side looks cooked (gently look inside along the spine), carefully turn the fish to cook the other side. Again, there should be a sizzle.
Cook for about 1 minute then add water and cover with lid. Cook for about 3-4 minutes more or until cooked through. (Cooked fish meat releases from the spine bone easily)
Plate, scrape all the sauce and spices from the pan to top and garnish.
