INGREDIENTS
2 Tbsp extra virgin olive oil
300g oyster mushrooms
1 tsp toasted sesame seeds, for garnish
Himalayan pink salt, to taste
TARE
1 cup mirin, organic if possible
1 cup organic soy sauce
½ cup sake
1 tsp white peppercorn
2 cloves garlic, smashed
2 pcs shallots, peeled and cut in half
1 pc ginger (1 inch), smashed
2 Tbsp coconut sugar
1 tsp toasted sesame oil
2 Tbsp maple syrup
DIRECTIONS
Make the tare: Combine all ingredients and bring to boil, then simmer for about 10 minutes or until reduced by half. Set aside.
Use a brush to clean mushrooms, just brush off visible dirt and set aside.
Once tare is cooled, use a clean brush and ‘paint’ tare on both sides. Set aside.
Sear mushrooms: Heat up oil in a sauté pan over the medium heat, add mushrooms and spread them into a single layer, let sear without moving.
Cook for a few minutes on medium heat without stirring and check the bottom side has taken on colour. Then turn and repeat.
Cook until bubbles form, 2-5 minutes, the bottom side should be golden brown and easy to lift off pan, then turn and cook for another minute or so.
Once both sides are coloured, plate the mushrooms and garnish with sesame seeds.
