SAUTE KALE saute WITH SAUERKRAUT

Ingredient / Recipe note

- Kale appears on the Environmental Working Group’s (EWG) dirty dozen list, categorising the most contaminated produce of each year. Hence it is important to source organic or pesticide-free kale.

-Sauerkraut has beneficial bacteria that is destroyed by heat. Mixing it after the kale is slightly cooled helps to preserve these good gut bugs.


INGREDIENTS

  • 300g organic kale, cleaned and torn to bite-sized pieces

  • 2 tsp extra virgin olive oil

  • 1 clove of garlic, minced

  • Himalayan pink salt, to taste

  • Ground black pepper, to taste

  • 1 1/2 Tbsp sauerkraut


DIRECTIONS

  1. Spin kale pieces as dry as possible.

  2. Heat oil in a pan at medium heat, once hot, saute garlic until fragrant and add kale.

  3. Add a dash of salt to help kale release moisture. Saute for about 3-4 minutes, or until just cooked through but still retaining a bright green colour.

  4. Plate kale and fold in sauerkraut.

  5. Enjoy!
