Ingredient / Recipe note
- Kale appears on the Environmental Working Group’s (EWG) dirty dozen list, categorising the most contaminated produce of each year. Hence it is important to source organic or pesticide-free kale.
-Sauerkraut has beneficial bacteria that is destroyed by heat. Mixing it after the kale is slightly cooled helps to preserve these good gut bugs.
INGREDIENTS
300g organic kale, cleaned and torn to bite-sized pieces
2 tsp extra virgin olive oil
1 clove of garlic, minced
Himalayan pink salt, to taste
Ground black pepper, to taste
1 1/2 Tbsp sauerkraut
DIRECTIONS
Spin kale pieces as dry as possible.
Heat oil in a pan at medium heat, once hot, saute garlic until fragrant and add kale.
Add a dash of salt to help kale release moisture. Saute for about 3-4 minutes, or until just cooked through but still retaining a bright green colour.
Plate kale and fold in sauerkraut.
