ROAST SAND GINGER FREE-RANGE CHICKEN

LOW CARB|GLUTEN-FREE|‘KFC’ flavours

YIELD: 4 servings

INGREDIENTS

  • 1.3 kg pasture-raised free-range chicken

  • 50g grass-fed butter, softened to room temperature

  • 1 Tbsp ground sand ginger 

  • 1/2 tsp Himalayan pink salt

  • 1/4 tsp ground white pepper

  • 1 head garlic

TIP: You can make this ahead of time by storing the buttered chicken in the fridge to 'dry out1, until 1 hour before roasting. This helps to achieve crispy skin.


DIRECTIONS

  1. Preheat oven to 200C with fan on.

  2. Rinse chicken well and pat very dry, inside and out.

  3. Place the chicken on a roasting rack, breast side up.

  4. Cut the garlic bulb in half, sideways. Place into the chicken cavity.

  5. Mix all remaining ingredients until it becomes a paste.

  6. Using gloves, massage the sand ginger butter paste on the entire chicken, covering the entire outside until the paste is used up.

  7. Put chicken in the hot oven to roast for 20 minutes or until the top side is a golden brown. Turn the roasting rack to ensure even roasting.

  8. Turn heat down to 180C and continue to turn every 20 minutes.

  9. At 40 minutes, check inside thigh temperature with a meat thermostat for doneness. Once it reaches 165C, the chicken is ready.

  10. Remove from oven and allow to rest for at least 10 minutes before carving into it.
