GRILLED SALMON BONES

INGREDIENTS

  • 600g - 1kg sustainably raised salmon bones (heads, collars, spines or a mix)

  • Himalayan pink salt, to taste

  • ground black pepper, to taste

  • finely chopped herbs for garnish

  • lemon wedges, for serving


DIRECTIONS

  1. Preheat oven to broil / grill setting

  2. Rinse and pat dry bones thoroughly and lay in a single layer in a roasting dish with a rack.

  3. Season the bones with salt and pepper generously on both sides.

  4. Broil on the upper third of the oven, leaving 3-4 inches of space between the oven coils and the bones. Until the skin is blistered and the bones are browned, about 7 minutes on each side. Monitor broiling if this is your first time, salmon is a high fat fish and will burn quickly if your oven is very strong or if placed too closely to the coils.

  5. Plate bones and garnish with herb of choice. Squeeze lemon juice at serving, if desired.

  6. Pull off meat between the bones and enjoy these parts with the best flavours!
