SAVOURY OAT PORRIDGE

Ingredient / Recipe notes:
- Whole grains have antinutrients that can be mostly removed by soaking, and therefore activating nutrients for absorption.
- Oats are the only adaptogenic whole grains, helping us to manage daily stresses.
INGREDIENTS
¼ cup organic steel cut oats (preferably soaked overnight and rinsed well)
1 cup filtered water / homemade stock (1/2 cup if oats are soaked)
1 pasture-raised egg
1 tsp wakame, rinsed
2 tsp pumpkin seeds, toasted and rough chopped
DIRECTIONS
Combine water and oats into a sauce pan, let it come to a boil and then turn down to simmer until oats are cooked through. About 10-12 minutes. (Only a few minutes if soaked)
Boil another pot of water and soft-boil an egg for 6 minutes on medium heat. Remove and soak in cold water until serving.
When the oats are cooked halfway, add wakame.
When the oats are cooked through, the liquids should have also reduced to make a creamy porridge. Plate in your favourite breakfast bowl, deshell egg and serve with porridge. Top with chopped roasted pumpkin seeds.
