Mala Brown Butter Scallop

INGREDIENTS

  • 1 Tbsp olive oil

  • 20g grass-fed butter

  • 200g sustainable scallop

  • 3 cilantro heads, and some leaves for garnish

  • white pepper, to taste 

  • Himalayan pink salt, to taste 

  • 1 tsp Mala Chilli Crispy sauce, or to taste

DIRECTIONS

  1. Rinse and dry scallops thoroughly, set aside. 

  2. Head up a heavy bottom pan over medium high heat, such as a cast iron skillet, once hot, add olive oil and a knob of the butter, let sizzle.

  3. Add the cilantro heads and let flavours infuse for a 10-20 seconds. 

  4. Add scallops one by one, drizzle salt and pepper. Then let them sear untouched until the bottom side is a nice crispy golden brown, about 1.5 minutes. Ensure the scallop is only half cooked to avoid any rubberiness. 

  5. Turn, let sear for about a minute and remove from the pan, set aside. 

  6. Turn down the heat to medium-low, add mala chili crispy and let infuse into the brown butter for about 30 seconds.  

  7. Return scallops to the pan and gently coat with mala brown butter. 

  8. Plate and drizzle the mala brown butter on top. 

  9. Garnish with crispy cilantro heads and fresh cilantro leaves. 

  10. Add more mala chili crispy sauce as desired. 

  11. Enjoy!
